Babettes is about to be reborn in Longmont.

The makers of French breads and pastries that developed an enormous following in Denver’s River North Art District neighborhood plan to open a bakery and a pizzeria in Longmont’s Prospect New Town improvement in February.

Owners Steve and Catherine Scott are hoping for a Feb. 2 opening.

The Longmont couple was in search of a spot to construct upon their Babettes model after the lease on their Denver spot expired in November. Then they discovered Tom Shook, a developer who supplied to lease his constructing to them on “hard-to-say-no” phrases. He even agreed “to do the tenant finish” for them, Steve Scott mentioned. “He’s essentially giving us time to get established,” mentioned Catherine Scott.

“The Scotts were a perfect fit,” Shook mentioned, including he wished somebody in his house with expertise in which he might believe.
